**This series is for Slow Food KC members only** In this class we will learn how to fabricate a whole pork belly, then cut down to a center cut pork belly. We’ll cover how to cut spare ribs and cover the steps to curing bacon. Cost: per person. See link for details.

* Gluten Free Cooking ClassGluten Free Cooking Class

Join us for a one of a kind cooking class, which wll be completely GLUTEN-FREE. You will learn all about different gluten-free grains, some that are growing right here in Kansas, and how to cook with them. Even if you are not sensitive to gluten, you probably know someone who is. Here is an opportunity to support local farmers in a whole new market and help them grow demand for these delicious and healthy grains. First you'll learn how to make your own custom gluten-free all purpose flour and then we'll use it to make a seasonal meal: Potato Gnocci with Basil Pesto and Zucchini Chocolate Cake. You'll learn how to convert a recipe written for wheat flour into a gluten-free recipe using the gluten-free all purpose flour. Jamie Milks, Everyday Organic Cookery and Slow Food Kansas City, will be conducting the class and will be giving away all of her secrets for making delicious gluten-free food. Included will be gluten-free appetizers, tastings of the recipes and samples of some of Jamie's gluten free bread and cookies. Chris is a true artisan! As a self-described bread obsessive with eight years of professional experience, Chris knows good bread! Join Chris at Casa Somerset as he breaks down the basics of materials, techniques, terminology, and many other resources to get you started making your own European-style rustic breads at home. We will have hands-on demonstrations and hand-outs describing every stage of bread-making, from feeding the sourdough, to mixing, to shaping and baking. Finally we will end the class with lovely fresh loaves to share, and each student will get his or her own sourdough culture to keep and cultivate. This is a class to attend! His bread is awesome!
