Laura Caponetti Brezzi's background in hotel and restaurant consulting (i.e. Villa D'Este at Cernobbio and Costa Smeralda Hotels), a degree in Italian Gastronomic History, and years of practical application, give her a unique pedigree to teach the secrets of her own cooking and of Italian "eating culture". Laura, and her husband Giorgio, live in the beautiful town of Tuscania, Italy which is about an hour northwest of Rome. There, they have a 125 acre farm, with beautiful gardens and a wonderful villa. For Michael Hursey, cooking is not a job it is his passion. His early exposure to Midwest hospitality has made his dream now become a reality at Casa Somerset. Working side by side with farmers and chefs has helped him incorporate his travels and culinary skills to create a special dining experience at his beautiful Italian style villa in Paola.

Bring your own wine; there will be no corking fee for these fantastic events. Mike met Laura in Italy 12 years ago, has attended her cooking school, and considers the Caponetti’s his Italian family. Please join us for one (or more) of the delightful events with Laura and Mike at Casa Somerset!

Cooking with Laura Caponetti at Casa Somerset

Laura has responded from Italy with menus for the dinners. We are happy to share these with you, sent directly from Laura.

Events:


Monday, March 15th 6pm. Slow Food KC Dinner $35.00 per person

from Southern Italy:


ANTIPASTO
Insalata siciliana (salad with fennels, oranges, olives etc)
Pomodori gratinati (Tomatoes baked, stuffed with parsey and capers)
Insalata "di rinforzo" (cauliflower salad with anchovies, olives etc)

FIRST COURSE
Orecchiette con cime di rapa (Pasta "orecchiette" sauté with rape broccoli, garlic, chili pepper...)

MAIN COURSE
Pollo alla "Franceschiello"(chicken savoury and spicy,recipe from Naples where Franceschiello was king)
Melanzane ripiene (eggplants stuffed with tomato, basil, breadcrumbs etc)
"Gattò" di patate (Mashed potatoes baked with cheese and diced ham)

DESSERT
Pastiera napoletana (tart filled with cooked wheat grains, ricotta, candied fruit etc)


All the dinners will end with Italian strong black coffee.
